The tradition was never having professional bullfighters and the aristocracy delegating and enjoying from the grandstand. The real tradition was noble gentlemen proving their bravery fighting bulls, as before was did with bulls, bears, lions, etc. Romans had no need to prove their courage on the arena, they had real battles enough to do so.
Torturing animals only made sense when human beings were tortured on a daily basis too. Not today.
